There were eight cookies left after the Board Meeting, that I gave to the office people at Spirit of Christ Catholic Community. Now, that is what I call passing those Biscochitos forward!

Internet information: Biscochitos originated in Spain where they were called Mantecoso or Mantecudos, which means buttery, greasy or creamy. In Northern New Mexico the cookies are known as Biscochitos while the Southern part of New Mexico calls them Biscochos. New Mexico State Legislature decided the cookie would be spelled Bizcochito and in 1989, Bill 406, declared it as the official state cookie.
Recipe
3 cups unbleached all-purpose flour
1 1/2 teaspoon baking powder
1-1 1/2 teaspoon ground anise
1/2 teaspoon salt
1/2 lb. lard-softened
1/2 cup plus 1Tablespoon granulated sugar
1 large egg
2 Tablespoons of rum, bourbon or sweet wine
For topping: 1/4 cup sugar and 3/4 teaspoons cinnamon
Sift together flour, baking powder, anise and salt
Beat lard, gradually adding sugar and cream until fluffy
Add egg followed by the alcohol
Continue beating
Mix in dry ingredients adding 1/3 of mix at a time
Beat no longer than necessary to incorporate all ingredients
A stiff pie-crust type of dough is what you want
Chill dough for about 15 minutes for easier handling
Roll dough 1/4 inch thick on floured surface
Cut cookies with cookie cutter
Avoid handling dough more than necessary
Transfer cookies to ungreased cookie sheet
Often should be heated to 350 degrees F
Cook 10-12 minutes
Mix cinnamon and sugar and dunk top of cookie in mixture
And there you have Biscochitos!
